The Chilli Jam Company – Chillirissa – On opening the jar, the contents is a thick light red/orange paste with a lovely smell of garlic and onions, the taste is wonderfully hot and pungent, the initial taste is from the onions, quickly followed by the chilli and then the richness of the sun dried tomatoes, this leaves a beautiful flavour in the mouth, it is hot and rich and yes I am really enjoying this.

Peppers By Post Open Day – 22nd August 2010 – This year the Pepper By Post open day is on the 22nd of August. Visitors will have the chance to walk around our polytunnels and greenhouses and see all the chillies we are growing. The open day is a Pepper by Post and Sea Spring Seeds event, so as well as chillies there will be other vegetable trials on show, including a sweet pepper and a tomato trial in the tunnels, and other vegetables outdoors. Fresh chillies, seeds and potted chilli plants will be available for sale. There will be some talks and cookery demonstrations as well.

Chilli Corn Bread Recipe – I love corn bread, it always reminds we of visits to the USA, it is not normally something I find at home here in the UK, it goes great as a side dish with BBQ pulled pork or a nice fresh salad.

Hotel Chocolat. – Chilli Truffles – There truffles have a crisp outer shell with and rather nipple like purple spot on the top for decoration, inside is a dark coloured chocolate ganache, which they describe as having a subtle chilli warmth, as you taste the ganache you get a definite alcoholic sensation before the smooth ganache melts in the mouth revealing the warmth of the chilli.

Re-potting. Once your seedlings have out-grown their initial pots, they will need re-potting. Chilli plants benefit from being potted-on gradually, that it, one size pot at a time. We pot from 3”, to 6”, then 9” and 12”.

We recommend a John Innes No. 2 mix. If the plant is going outside, add a little more grit or perlite to improve the drainage – black/dark-coloured pots are also recommended for outdoor plants.

Half-fill the new pot with compost. Place your index and second finger either side of the plant base, invert the pot and gently pull the old pot off. Gently tease-out the roots at the base of the root-ball. Place the plant into the new pot – check that the old soil level is about 2cm from the top of the pot, if not adjust the soil level in the pot. Place more soil around the plant’s root to fill the pot, and gently firm down the compost. Water-in well and leave to drain.

Flowers will begin to form when the plant begins to branch-out. Only a fraction of the many flowers produced will set fruit – usually the earlier flowers set fruit more readily than late-season flowers. Night-time temperature is key for fruits to set – ideally this should be between 18C and 25C. If you see excessive flower drop, this can be caused by night-time temperature of over 30C (not very likely in the UK); too much Nitrogen in the compost or feed; high winds or lack of pollination. Hand pollination can be done with a very fine paint brush.

Fruits form at the base of the flower and grow out through the petals. The un-rip colour is typically green, but yellow and purple are also common. Once the pod reaches full size, the seeds start to develop and the heat level increases. Chillies can be picked and used at many stages of development – for example, Pimento de Padron is picked very early (when only a ¼ of its full size. Many chillies are traditionally eaten ‘un-rip’, such as Jalapeno, Hungarian Hot Wax and Santa Fe Grande. To maximize the crop from a plant, keep it busy by picking fruits off as soon as they are ready for the use you have in mind – this will encourage more fruits to set.

Darth Naga reviews – Blair’s Ultra Death – Well its that time again chilefanz!! Today I bring you my latest video review, and I reckon this one may just go down in history as the second stupidest thing I have ever done (the first will hopefully be uploaded to youtube at some stage LOL!) stupid for the simple fact that after hearing from Rose Seymour that James beck said “we don’t use milk in our video reviews in the US” I decided to hit the bottom end of mental and do a vid review WITHOUT MILK!! But anyway, the sauce I am reviewing today comes from the godfather of the US hotsauce scene Mr Blair Lazar himself, and this particular sauce is famous for not only being the hottest sauce he mass produces, but also for being one of the only ones to have its name changed during his major rebranding last year!

David’s Chilli Oil – Much more than just a gourmet oil – This is not just an “Oil and Chilli” blend; there is a whole extra level of flavour to be found here and with Rape seed oil becoming the New Olive oil, its time may have come. I am sure you will see more and more gourmet products based on Rape seed oil.

ChilliPepperPete’s Easy Fish Jambalaya Recipe – Jambalaya is a Louisiana Creole dish of Spanish and French influence, it is a close relation to the Spanish paella. This version is made a little quicker and simpler by pre-cooking the rice, traditionally the rice would be added with the stock at the end of preparation and then cooked for 45-60 minutes.

Growing Chillies from Seed: Part 2 – Once you have some seedlings to pot-on (see picture 1), it is time to separate them and pot them in individual pots. We tend to pot-on gradually, so we use 3” pots first. Using very loose seedling compost will help this stage. We like to use vermiculite on the surface and perlite in the mix.
