Darth Naga

Hi chilli padawans, hows it going? I hope you all had a cracking easter and stuffed yourself silly with lots of chocolate and other shite, while i sat at home and dieted….being a fat bastard has its drawbacks!

Anyway, with that out of the way allow me to introduce a newcomer to the chilli scene, this sauce today comes from a guy named Steve Cooley, who runs “Daddy Cools Hot Sauce” over in Glossop, he’s an artisan sauce maker who has about 5 sauces in his range currently as far as I can tell (this figure may be wrong lol) and is always developing new flavours and products in his range.
He sent me this sauce for a review a little while ago, and I thought I would do it justice and review it for the Chilefoundry, so without further ado, lets get down to business…

Ingredients: Scotch bonnet, lime juice, honey, cocoa powder, smoked paprika, apples, onions, salt, black treacle, tomatoes, smoked hickory, apple cider vinegar, black pepper, chipotle chilli powder.

Seeing as summer is just around the corner, means that BBQ season is upon us (as is chilli festival season!) and this sauce is perfect for that! “Daddy Cools Smoky BBQ Sauce” is one of the first sauces brought to us by Steve Cooley, and it seems to be getting more widespread recognition of late, judging by the reviews on their facebook page and twitter stream, so I thought I’d get off my arse and get my review up as well!

The bottle itself is a relatively typical of the hotsauce industry in the UK, (although at time of print and in the video I must point out that Steve has recently switched to the more widely used sauce bottles that 90% of the UK hotsauce manufacturers use!) and has a little horned dude on the front, who has disturbingly wild eyes, along with the name of the sauce in a pseudo wild west style lettering, accompanying this is the typical ingredients list and other things such as website address and whatnot.

Tbh, as always I go bleat on about this sauce, and you could read it and go “that sounds nice!” but instead, I like to show you my true reaction to the sauce, and this should tell you whether or not its a winner in my eyes, so please, enjoy the video.

You can put this sauce on most things, but especially BBQ, it has a smoky sweet taste that lends itself perfectly to cooked chicken, pork, beef, ribs etc etc. Obviously in the video I did not have a BBQ to hand, nor all the meat necessary to make such an assumption, but its pretty much a no brainer that this stuff will go well on charred summer food!

Hi Chilli Padawans!! Well, bugger me this review has been a long time coming…after about 6 months of down time I am finally back on the horse, covered in chilli sauce and whistling dixie! (well, everything except those last couple of things!) And this is a *cracking* sauce to do a comeback with too!

This sauce is made by the Powers family of mexican/american-british descent on the Isle of Wight using a recipe that originated in California that was handed down through the generations until it reached the current producers of the sauce, where it has evolved into a blend of the finest ingredients and including fruits and chillis to make the sauce that I’m reviewing today!

Ingredients:Tomatoes, Onion, Mango, Vinegar, Mango, Habanero peppers, Chipotle, Garlic, Lime, Cilantro (coriander), Agave nectar, Salt, Spices.

So, if you all know me well enough, you know that I LOVE chipotle sauces, in fact I don’t think i’ve tasted a bad one yet… (aside from cottage delight, that stuff was rank) and as such, I doubt I’m going to dislike this either! But lets have the sauce do the talking!!

Its in a beautiful skull shaped bottle proudly adorning a label on the back of its head that simply reads “Bloody Hell Hotsauce” the main label is attached to the neck of the bottle by string, which itself has the logo wrapped round it also, so you’ll be hard pushed to forget the name of this sauce!

Right, I’m waffling on, lets get down to the nitty gritty eh padawans?

And there you have it, for £13 delivered this is an absolute STEAL, especially considering the sauce itself is bloody gorgeous *and* you get 400ml of it!! My wife and I have been running our catering business since 1990. Although we love what we do, my real underlying passion has been all things Chilies for around 20 years, yes I’m what’s known as a “Chillihead” With this passion (obsession maybe) we have decided to diversify and create “Devonchilliman

In 2013 I went from growing around a dozen chili plants at home to growing 200+ plants and rented 5 x plots in a local community shared glasshouse in Teignbridge.I had a very successful harvest of which I decided to use the chillies in our produce & started to make products with them, we then decided to have a catering unit wrapped in a chilli theme and it’s first outing was at “The Great Dorset Chilli Festival” of which was a huge and enjoyable success. The products we sold were ChilliSteakburgers, Chilli Hot Dogs, Pakora Battered Jalapenos. We almost sold out of our entire stock of Jalapenos in the first day but luckily DARTH NAGA and JAMIE SYTHES were at hand & rushed off to the Wiltshire Chilli Farm to harvest more !.

DevonChilliman Signs of lifeI now rent a 36 meter glasshouse and in 2014 grew 600+ chili plants and now have a website which is www.Devonchilliman.co.uk of which I sold fresh UK grown chilies and sent out via post/courier to my customers. I have just started as of 14th January 2015 sowing my seeds for the 2015 growing season. Last year I soaked the seeds in a week black tea solution as I heard that the tannin in tea softens the seed casing and then I planted them into compost in my Propagator. This year I have soaked some but not all, I currently have almost 400 x seeds in “GRODAN” cubes of which I soaked the cubes in a week solution of “Canna Start” 1ml/1Litre of water they are now in the Propagator set at 27°C and they are starting to germinate already. This I find the exciting part of the season!

After trailing products from Greenhouse Sensations and Growth Technology I am starting to experiment with more advanced propagation techniques this year, namely the hydropod an aeroponic unit.

I plan to move the seedlings when the first set of true leaves appear to the hydropod and am looking forward to the results.

Happy New Year Chilli padawans!! Hows the new year treating you? Mine was amazing, thanks for asking!…oh…you didn’t ask?..hmm…

ANYWAY! Here it is, the first video review of the year, and it’s a blinder! I have a sauce that was crafted by two very evil gentlemen, a couple of swedish guys, Marc and Jimmy are  known to the world simply as “Evil Chefs” and they have a penchant for creating some truly evil, but great tasting things..and this my friends…is one of them!

Ingredients:

Fresh Naga Chilli, Cider Vinegar, Onion, Garlic, Salt, Water.

A rather simple list of ingredients as I’m sure you’ll agree, but if you look on the Evil Chefs website you’ll see that pure evil doesn’t need to have many ingredients, its all about the process and application of such a product!
Know simply as “No.1 pure 100% evil” the evil chefs have this down as a “natural naga hot sauce” and i’ll tell you what, they’d be right!

The garlic and onion can barely be tasted in this sauce, this is the evil chefs homage to the naga pepper, and it really does show, pure naga flavours and stupid heat push through everything else to provide a kick and taste thats akin to eating a naga straight up (coincidentally they sell those too!) and with no mucking about, its pretty clear these chefs want to pleasure and yet hurt everyone that comes into contact with this sauce..well..they are evil after all?

So as you can see, it pretty much destroyed me, but then I had *a lot* of it in one go!
(trying to defend my current low tolerance of chilli there :p )

“But Darth, what the hell can we use such an evil sauce for!?” I hear you cry, well my Chilli Padawans, I can tell you now that this would be excellent to use wherever you would use a fresh naga or 5, so chilli and curry are a good start, if you’re particularly sadistic you could splash it over your chips or even mix it with some oil and do pure evil roasties with it! (you can have that one) The bottom line is, use this wherever you want a nice fresh chilli flavour, but also a good punch of clean heat (by clean I mean not extract based).

You can buy this marvellous bottle of sauce over at the Evil Chefs website and as i said in the video, the only thing that lets this sauce down, is the price…which unfortunately is a little too expensive for my tastes, if you want a single bottle, delivered to the uk, its 159 SEK, or £15 including shipping…which as i’m sure you’re aware is at the high end..but then it is a high end sauce!
