Scoville Units

Some manufacturers publish the number Scovile Units (SHU) for their sauces, if they do this we tend to publish their figures. Otherwise we look at the ingredients lists and see if they list the percentages of each chillies used in the sauce, from this we can calculate an estimated value for the sauce based on the range of heat these chilli provide.

Scovile Units – The heat of a pepper is rates in Scoville Heat Units (SHU’s), named after Wilbur Scoville, a chemist at the Parke-Davis pharmaceutical company, who developed this scale and method of rating. Today “High Pressure Liquid Chromatography” (HPLC) is used to generate more accurate ratings.
