Geordie Translation:- On a resent trip te The Toon wi cyame across Bernie Bumm’s creator Earl Gough an his range of sauces. Wi tried a few an then selected the hottest one fre a review

On popping open the bottle the smell has the effect of widening your nostrels, as my nose recovers I can smell the white vinegar and the lime. The heat is instant, my mouth is on fire as the heat and then hickups smack me about, a teaspoon now seems a lot of sauce as a taste. WOW a few minutes has passed and I am now back at the keyboard, eyes watered, tongue is throbbing. Still little response from my taste buds, so a much smaller dose this time… it burns… I can feel and it is a feeling of a little sweetness and then I am again wiped out.

So a bit of fail for me tasting this sauce on its own, so later it has been added to my lunch, beans on toast, and then heat becomes more manageable, it is still very hot and just a teaspoon is needed to bring the beans to life, cannot taste the aubergine, but the apple juice and lime are much more noticeable.

You can see on the square bottles that the labels are placed on the corners, Earl told us this was a happy accident as when the first labels arrived they had been made to stock on the sides, but due to the rounded corners on the bottles they started to peel, so they where placed on the corners giving the bottle a unique and very identifiable look.

Best to use this kind of sauce with care the Carolina Reaper is a stupidly hot chilli, tests have seen it pass over 2 Million Scoville units at a peak result and even with the average of 1.5 Million

There is a new range of purees from Hot-Headz that include some interesting chillies varieties. Each sauce contains just the basic ingredients needed, a puree made from the named chilli and just a little acetic acid. With no other herbs, spices or garlic, you get just the flavour of the chilli.

Hot-Headz Hard Core Range

The range all branded Hard Core includes Carolina Reaper, Trinidad Scorpion, Chocolate Habanero, Fatalii, Roasted Jalapeno, Red Serrano and Roasted Poblano. prices range from £6.99 to £3.99 per 50ml bottle.

A review of these will follow shortly.
