Burning Desire - Flame Roasted Scotch Bonnet SauceThis is the sauce that won the “Best of Show” at the Fiery Foods Chilli Festival in Brighton in 2010, this win became the catalyst that started the Burning Desire Food Company in 2011.

The sauces smells as good as it did when I last tasted it back in 2010, it has a instant aroma from the smoked chillies. First taste and I can remember why this sauce did so well,  the sauce is quite liquid and unthickend. The first flavour is from the smoked chillies and peppers, then comes some sweetness from the dates, raisins and the dark muscovado sugar all carried by the base of the sauce make from the onions and celery.

The use of Red Wine Vinegar in sauces always works so well for me, I use it in cooking all the time, it is so much more mellow than the harsh taste of malt vinegar.

Ingredients:- Onion, Celery, Flame Roasted Scotch Bonnet Chillies, Flame Roasted Thai Red Chillies, Flame Roasted Red Peppers, Dates, Rasins, Red Wine Vinegar, Lemon Juice, Garlic, Dark Muscovado Sugar, Salt and Spices.

I think this sauce is still a real winner, a good slug of this in a boring old Bolognese brings it instantly to life, another great use is to mix some mince before making some burgers, about one teaspoon per burger seem to be idea, but a I always have a heavy hand and it may have been.

At £5.00 for a bottle, it is not cheap, but this is an award winning sauce make by an artisan producer in small batches and you always pay for what you get.
