Chilliqueen - Coriander & Shallot Chilli Jelly

On cracking the lid there is the sweet aroma with hints of flavour to come. The jelly is well set with an even distribution of the ingredients. This this the kind of jelly that would go so well with beef or some cold ham, it is not a hot product, but there is just something special about the combination that makes this a bit special, the coriander flavour is not overpowering, but provides a background for the other ingredients.

Ingredients: Unrefined Sugar, Malt Vinegar, Water, Fresh Peppers, Shallots (3.75%), Scotch Bonnet Chillies (0.94%), Chopped Coriander (0.63%) Natural Coriander Flavouring, Gelling Agent, Fruit Pectin.

This would also make a great glaze for a Gammon joint, roast the as normal, but at around 20-30 minutes before before cooking is complete, removed from the oven and spread the jelly over the the joint, reduce the own heat to 160-175°C and return the gammon to the oven until the internal temperature reaches 70°C (Always good to have a meat thermometer).
