What makes a jam “Extra”, well the EC rule is that is needs to be a minimum 45% fruit not 35% that is normally needed for a jam, now this Jam from Mr Vikki’s contains 55g of fruit per 100g, and surprisingly 60g per 100g, During cooking process a lot of water is boiled away concentrating the strawberries which are 92% water. Now unlike many the extra jams you find in the supermarket, this one is hand-made in the Lake District and has got 3% Naga chillies in it.

This Jam has a very dark red colour, the smell on opening can only be compared to inhaling strawberries, on the surface of my jar are at least 3  strawberries waiting to be scooped from the jar, surrounding them is a thick well set jam. It is odd in some products 3% Naga chillies can over power delicate the flavours, but not these strawberries and not this jam. As the cool jam plays on my tongue, the strawberries do their magic, only as this warms up does the flavour and the heat from the Naga’s start to work it way out. It is never an extreme heat, more of a summer glow, leaving me feeling just that little bit more ready for the morning.

Ingredients: Strawberries, Sugar, Pectin, Naga Chilli (3%), Lemon Juice.

Now just encase you think that there where just three strawberries in that Jar, I can tell you I am now half way down the jar and it is still packed with fruit, there is a lot of extra in Mr Vikki’s Extra Jam. At £3.00 per jar this the great value for such a unique and handmade product, this wont’t last long, I can see a scone in my future very soon.
