The Rib Man - Holly Fuck The Rib Man – Holly Fuck

HOLY FUCK…….. is the name of my next review sauce. No I am not being rude this is actually what it is called. Made by ‘The Rib Man’ who is based on Kings cross on a Thursday and sells ribs to die for. Whether it be by the rack, in a bun or in a wrap. But that was not enough for ‘The Rib Man’ o no. He decided to play around making hot sauces. Customers approved of what he made but somehow found them getting hotter and hotter and hotter until he finally came up to this. Holy Fuck hot sauce. Made from Scotch Bonnet and Naga it is sure to pack a punch. Worth taking note that these are all made to order and fresh so please expect to wait 7-10 days for delivery. But it is worth it. For a mere £5.00 a bottle your in for a treat of heat.

With a smoky and bbq taste that has a slight fruityness behind it this leaves the whole of your mouth tingling which swiftly turns into a burn. Admittedly I did use this sauce in a roll with a couple of slices of beef which I know is not the same as The Rib Man’s succulent and juicy ribs but it’s the best I have to offer tonight. But even then this tastes spectacular. Rich red in colour which you can clearly see a large amount of chilli have gone into this. Seeds and chopped pods floating about covering every part of the sauce. The texture is pretty smooth considering there is what seem to be so many chopped pods.

Scrolling through reviews of the ribs and this sauce are all extremely positive. I am going to have to take a trip to Kings cross to check out these now. Will have to take my bottle of sauce along for the journey also hehe. Although I am speaking highly of this sauce I feel I have not done it justice by reviewing it to its purpose. I can imagine it only getting better with the real deal. Proper rib meat in a wrap or just straight off the rack. This is a must buy sauce and a great time to get it too as I am sure we are due some sun real soon. So get out the bbq.

The Smokey Joe Sauce Company - Spicy Banana Ketchup

Just imagine that you live on the idyllic isle of St Lucia, I can because I have been there, and so it seems has Smokey Joe. The island is about 230 square miles of volcanic mountains with the highest reaching over 3,000 ft above sea level. The hills and valleys  are covered with a rich green carpet of tropical trees, a lot of which are bananas plants, with bananas being one of the islands major exports.

St Lucia has a history of both French and British, but in 1814 it was finally secured by the British, in 1979 it gained full independence, while remaining part of the Commonwealth. It is a beautiful island with a warm welcome for tourists.

Bananas make a great base for a sauce, the sweetness mean you don’t need to add as much sugar, and this sauce makes great use of the bananas, the spirit vinegar stops the banana from oxidizing and turning the sauce brown, this ketchup is great balance of the sweetness and flavour of the banana, the acidity of the vinegar, then the spices, most notably the allspice  and the cayenne peppers.

Ingredients: Water, Banana (44%), Spirit Vinegar, Sugar, Onion, Sultanas, Garlic, Slat, Allspice, Turmeric, Pepper, Mixed Spice, Cayenne Pepper, Cloves.

It is not everyday that you find a ketchup that is not tomato based, and this one works so well, the consistency is thick, but very pourable, ideal for pouring over some BBQ chicken or even some slow roasted pork. In the recipe section of their web site they have  recipe for Pork Kebabs that use the Ketchup as a glaze which we have repeated below:-

Pork Kebabs with a spicy Banana Ketchup Glaze
Recipe Type: BBQ
Author: The Smokey Joe Sauce Company
Serves: 4 to 6
Ingredients
  • 2 lbs pork shoulder, cut into 1 inch cubes
  • 10-15 bamboo skewers
  • 1/2 cup soy sauce
  • 6 cloves garlic, finely minced
  • 3 tbsp lemon juice
  • 2 tsp Worcestershire Sauce
  • 5 tbsp sugar
  • 2 tsp ground black pepper
  • 1 cup Spicy Banana Ketchup for glazing
  • 2 tbsp vegetable oil
Instructions
  1. In a large bowl, combine soy sauce, garlic, lemon juice, Worcestershire sauce, sugar, and black pepper then mix together.
  2. Add the meat and mix thoroughly until well coated.
  3. Cover the meat and the marinade and put in the fridge for about 4 hours.
  4. Soak skewers in water for about 1 hour before using.
  5. Thread meat onto the skewers.
  6. Prepare basting sauce by combining Spicy Banana Ketchup and mixing well.
  7. Cook on the BBQ or medium grill, basting every time you turn it.
Notes

Serve with rice and peas and/or salad.

This sells for £3.20 for a 270g bottle, which while not cheap, you need to remember this comes from a small producer who creates some very unique and special products, you can order this on their web site were you can also find an ever growing list of stockists.
