We have now reviewed a few Bim’s Kitchen products and kindly he has sent us some samples of a couple of his unique ingredients to take a look at.

Cubeb Cubeb

Cubeb also know as the tailed pepper was one of the most valuable spices in the in Europe during the Middle ages. It is also know as the Java Pepper and is grown commercially in both Java and Sumatra.

It’s flavour is best described as a cross between allspice and black pepper

Alligator Pepper Alligator Pepper

Alligator Pepper also know as Grains of Paradise, Melegueta pepper and Guinea grains is a native of West Africa.

Around 1850 the UK imported many thousands of lbs of this exotic spice but it is little know here in modern times.

It is closely related to cardamom and has a strong peppery taste.
