This must be almost the simplest sauce possible it is approx 80% Fatalii Chillies with some vinegar and a little preservative to help retain the colour, this should be an excellent opportunity to taste the chilli in it’s base form.

The Fatalii is not in the million plus range of chillies, but at 100,000 to 300,00 Scovile units it is hot enough, this sauce is an amazing orange yellow colour

On opening the bottle the smell from the sauce has a citrus almost lemon hint to it, the flavour is amazing, there is a again a slight fruity flavour before the heat kicks in WOW for something under the ½ million mark it was a lot hotter that I expected. A second taste of this and the heat is less of a slap in the face and there is quite a complex flavour hiding in there, it is reminding me of cardamom’s mixed with oranges and lemons.

My mouth is taking a while to cool down from this, it has the power to linger with attitude, I love it..

Ingredients: Fatalii Chillies, Distilled Vinegar, Citric Acid & Ascorbic Acid (Vitamin C) to preserve colour.

CaJohn’s also produce Cayenne, Habaero, Chipotle, Serrano, Jalapeno and Red Savina purée’s and I am sure there will be others, the label image on the front of the bottle looks great, but the white text on the back is to small to read easily against the yellow sauce.

The sauce  and some of the other purée’s are available from Hot-Headz and at £5.99 a bottle, it is not cheap, but the bottle is packed with fruit and attitude
