Dave’s Gourmet – Roasted Red Pepper Chipotle Hot Sauce

I like roasted peppers (See our guide to making them at home on the BBQ), also Chipotles come near the top of the list of favourite flavours, so this sauce is one I have been looking forward to trying.

Dave’s Gourmet is famous for the original super hot sauce “Dave’s Insanity Sauce” which started the whole extract sauce phenomenon back in 1995 when it was banned from the National Fiery Foods Show for being too hot.

From this single hot sauce a major business and industry has grown up and this sauce is part of their ever expanding range of products.

The sauce has a nice deep dark red colour with a few black flecks and the odd chille seed floating in the mix on opening there is that smell that only comes from flame roasted peppers and just a hint of vinegar mixed in for good measure.

The little black flecks are from the skins of the roasted peppers that are not completely removed after roasting and it is these bits of burned skin that give the peppers that wonderful flavour, in this sauce you can still feel them on your tongue which can make the sauce feel a little grainy, the flavour is not as strong as I had expected from the smoky smell, but it is very pleasant and would be great on pasta or with meat balls in a sub.

Ingredients: Roasted Sweet Pepper, Carrots, Chipotle Peppers, Cane Vinegar, Habanero Pepper Pulp, Salt, Lime Juice, Onion, Olive Oil, Passion Fruit, Citric Acid and Xanthan Gum

There is surprisingly little heat from this sauce, which is rated as warm by the barometer on the bottle, I think I would put this sauce as mild, it is a good flavour but I suspect the 5oz/148ml bottle will not last long, I think it needs to be in a good size pouring bottle.
