Atkins and Potts Chipotle Chilli Mayonnaise

Atkins and Potts Chipotle Chilli Mayonnaise

Atkins and Potts are based in Newbury, Berkshire and is still a family owned business, they make all their products in small batches, I found this jar in one of our favourite Deli’s Bramble and Sage , just down the road in Sutton Montis, I often seem to find interesting products on their shelves, also their coffee is excellent.

The Mayo comes in a 220g tall jar, it has a slight red tinge to the normal mayo colour with a few flecks of Chilli being visible in the mix, on opening there is the unmistakable smell of lemon drifting up.

Ingredients: Rapeseed oil, Pasteurised Free Range Egg Yolk, Water, White Wine Vinegar, Sugar, Prepared Dijon Mustard (Water Mustard Seeds, Sprit Vinegar, Salt), Salt, Dried Chipotle Chillies (0.8%), Concentrated Lemon Juice, Smoked Paprika.

The texture of the mayo is excellent; the first taste in the mouth is of quality mayonnaise, then the smokiness of the Chipotles and Paprika, followed by the gentle warmth, it is a very pleasurable experience, one I am repeating again and again was I write this.

They have not added a lot of Chipotle, just 0.8% and then just a little Smoked Paprika, but it is enough to impart the flavour without overpowering the eggs, lemon and mustard, this has not just become another way of imparting a burn to the consumer.

For me this could be used to replace normal mayonnaise in almost all situations, I love it, it may not suit hardened Chilli Heads, but it is a definite gourmet product.
