Chilli Corn Bread Recipe

I love corn bread, it always reminds we of visits to the USA, it is not normally something I find at home here in the UK, it goes great as a side dish with BBQ pulled pork or a nice fresh salad.

150g (5oz) finely ground Polenta
150g (5oz) Self-raising Flour
2 Eggs
4 tsp Baking powder
1/4 tsp Salt
60g (2oz) Caster Sugar
1-2 tsp Paprika
2 Chillies, Finely chopped (Jalapeno’s are good here)
200ml (3/4 cup) Milk
300g (10oz) Crème Fraiche

Lightly grease a medium sized round cake tin and preheat the oven to 200C. Mix all the dry ingredients in a mixing bowl and add the chopped chillies.

In a separate bowl mix the milk, crème fraiche and eggs, then add to the dry ingredients and blend using a whisk or mixer.

Pour the mixture into a cake tin, place in the oven and bake for approximately 30-45 minutes. When it is ready the bread should be golden brown and firm to the touch.

Corn bread is great for carrying flavours, try adding 100g of strong cheddar cheese, or some tinned sweet corn.

Tried this tonight, absolutely deliceous, had to guess the amount of eggs though cos you didn’t list it in the ingredients, i guessed 2, hope that was right, best cornbread recipe i’ve tried, cheers
