250g Onions
3 Garlic cloves
150g Carrots
150g Courgette
100g Peas
100g Cauliflower

100g creamed Coconut
handful Curry Leaves
Stock

blend together:
4 tsp Coriander seed
2 tsp ground Cumin seed
2 tsp Turmeric
4 dried Chillis (heat to suit) suggestions are Kashmiri for mild, Byadgi for medium, Naga for extra hot

Fry onions and add add vegetables to soften.
Add spices once vegies are cooked through.
Add coconut, lemon juice, stock and enough water to cover.
Add dal and potatoes and curry leaves
Stir well until cooked to perfection.
