The Chilli Factory - Fiery Frillneck Hiss

This sauces comes all the way from Australia and has won a number of awards in its home country including 1st prize for Best Hot Sauce Tomato in the Australian Fiery Food Awards in August 2004 as well as a handful of 2nd and 3rd places in other events.

On opening the 240ml bottle there is a sweet smell of Smoke & Tomatoes, the sauce is a deep red colour with flecks of herbs and chilli seeds floating in the mix.

Ingredients: Tomato (71%), Chilli (12%), Water, Natural Smoke Flavour (4%), Balsamic Vinegar, Sugar, Salt, Garlic, Herbs & Spices.

This is a surprisingly hot sauce, I am used to getting bottles of sauces with manufacturer’s ratings much higher than they deserve, and this one rated 9/10, while it is not that hot, it is not ketchup.

The first taste is of smoke, which hits the back of the throat with a thud, then a bit of tomato flavour followed by the heat and garlic, on its own the sauces is a little over smoked, but when added to a barbequed burger it really hits the spot.

Initially I did not like this sauce, the smoke is very strong, but the Tomato and Chilli, Balsamic and Garlic soon work their magic and I have now getting used to the smoke and really enjoying the tingling on my lips.

At £4.95 a bottle this is not cheap, but you get a lot of flavour for your money and the smoke just needs to be toned down by adding it to food and not swigging directly from the bottle.
