Quick and Simple Enchilada Sauce

Got a few minutes to yourself in the kitchen before want to make something quick and simple that goes great with home made Turkey Enchiladas (An after Christmas special).

2 tbsp Chilli Powder
Olive Oil
1 Large red onion (very very finely chopped)
2 Garlic Cloves (Crushed)
3 tsp Flour
250g Tomato Passata (sieved tomatoes)
Water as required.

Gently fry the onions and garlic in a little olive oil until translucent remove from the pan and put to one side.

Now we are going to make a roux, add 3 tablespoons of the olive oil to the pan over a low heat and then add the flour and mix well into a fine paste, then add the chilli powder and passata , simmer for a few minutes stirring all the time as the sauce thickens, return the onions and garlic to the pan and simmer for a few more minutes. Add some water if the sauce gets a bit thick.

You can use this on enchiladas or if you are like me I wrap some corn tortilla over that left over Christmas Turkey that has been mixed with some fresh peppers and onions (may be a little cooked bacon/gammon) and then covered in the sauce and some grated cheese and baked in the oven for 10-15 mins or until they are cooked and the cheese is nicely melted.
