Holy Cow - Goan Extra Hot Lime

This is the first of the Holy Cow sauces we have reviewed. The bottle are an nice slightly waisted shape and contain 290g, the sauce is a very green colour (see below to find out how) the sauce is nice and thick with flecks of colour and seeds, on opening you get a beautiful fruity peppery smell.

This was a lot hotter than expected form a supermarket sauce, where extra hot normally means “has seen a chilli”. The heat is the first thing I get from this sauce, then a big belt of lime with subtle hints of ginger.

Ingredients: Water, Ginger Puree (21%), Green Chilli (4%), Sugar, Habanero Chilli Puree (Peppers, Salt, Acetic Acid), Lime Juice Concentrate (2%), Modified Maize Starch, Salt, Cumin, Tumeric, Stabiliser (Xanthan Gum), Copper (Copper Chlorophyll).

Just in case you were wondering Copper Chlorophyll is a natural green colour, it is commercially extracted from nettles, grass and alfalfa and is probably responsible for the bright green colour.  The Xanthan Gum is used to increase the viscosity of the sauce  just small amounts (.5%) can give the sauce its the nice thick consistency.

I am very impressed with this sauce for a supermarket product, it is idea for marinade for cod or other firm white fish, or just as a dip
