My Daughter Lizzi is a very good cook, she has a light hand with baking, I asked her to come up with a recipe for today, she said “I will make you something special!” and she did!

Chilli and Apricot Blondiess

Lizzi's Chilli and Apricot Blondies

Everyone must of heard of the combination chillies and chocolate even if they have never tried it, correct? Well If you haven’t your missing out! We decided that we wanted to use dried apricots with it, but you could use other fruits!

200g/7oz butter
300g/10½oz quality white chocolate, chopped
3 medium eggs
150g/5oz caster sugar
½ tsp pure vanilla extract
200g/7oz plain flour, sifted
pinch of salt
100g Dried Apricots
1 large fresh red chilli, de-seeded
1 large fresh green chilli, de-seeded
100g/3½oz caster sugar – for the chillies
150ml/5fl oz water


  1. Pre-heat your oven to gas mark 4
  2. Chop – roughly 5mm pieces – and boil the chillies with the 100g caster sugar and the water and simmer for 5 mins
  3. Melt the butter and 150g of the chocolate in a bowl, over a pan of boiling water until combined
  4. Beat the egg, vanilla essence and sugar in a bowl until combined
  5. Pour in butter/chocolate combination
  6. Fold in flour and salt.
  7. Chop roughly and add the dried apricots and chocolate and stir in along with the drained chillies
  8. Put in a grease-proof lined baking tray and bake for 25 mins, until golden brown!
  9. Cut into pieces of your own choice (depending how hungry you are!) and serve hot with ice cream or cooled later on!

Other Things you could try are:

  • Using Milk Chocolate and make them brownies
  • Use Dried mango or papaya
