Simple and Quick Salsa Verde

This is a very simple version of a South America green Salsa; it can be made in a few minutes, but improves if kept in the fridge for an hour before serving.

I use this as a side dish with roast chicken to give it an extra zing.

  • Ingredients:
  • 5-6 Salad Onions (Spring Onions), Finely Chopped
  • 1 Onion, Finely Chopped
  • 2-3 Cloves garlic, Finely Chopped
  • 1 Large bunch fresh Parsley, Finely Chopped
  • 1 Large bunch fresh Coriander, Finely Chopped
  • 2 Green Chillies, Finely Chopped (Not to hot)
  • 5 tbsp Extra Virgin Olive Oil
  • 1 Freshly squeezed Lemon
  • Salt and Pepper to Taste

All the ingredients need to be finely chopped by hand, you can do this if you want a smother version do this in the food processor, but I don’t recommend it.

I often add other ingredients to this depending on what I have in the fridge; capers are made an interesting addition, as does swapping the lemon for a lime or grating some of the peel over the finished salsa.
