So you have been growing chillies and now you have a lot more that you can eat?
Probably the simplest thing you can do with them is to make a simple Louisiana style hot sauce (Tabasco®, Frank’s Red Hot and Crystal Hot Sauce are all examples of this Louisiana style). It only takes a few minutes to make.
20-30 Fresh Chillies (de-seeded and stems removed)
500 ml bottle White Vinegar
1-2 tsp Salt
Place the chillies and salt in a blender with a little of the vinegar and start the blender adding more vinegar as required to make a smooth sauce, you can make this as thick or as thin as you like.
Put the finished sauce into a sterilized bottle and store in the fridge for a couple of weeks at least before using. This should last a few months in the fridge if you can resist it that long?
You can make this sauce with any chilli variety to have; traditional Louisiana sauces would use Tabasco or Cayenne chillies, but this is your sauce so go wild.
