NoMu Tomato & Chill Pesto Mix

When I think of Pesto only one thing comes to mind is a simple recipe of Basil, Pine Nuts, Olive oil and Parmesan. It seems I have been a bit limited in my outlook, to quote from Wikipedia “Pesto (Italian pronunciation: [?pesto], Genoese [?pestu]) is a sauce originating in Genoa in the Liguria region of northern Italy (pesto alla genovese). The name is the contracted past participle of pestâ (“to pound, to crush”, from the same Latin root as the English word pestle), in reference to the sauce’s crushed herbs and garlic.”

This Pesto requires little hard work and no crushing at all, in fact it does not come much simpler than this, just add boiled water, stir and wait 2 minutes, add olive oil and stir again, pot noodles are harder work (I’m told).

In this case though it also tastes wonderful. The inital rich flavour of ripe tomatoes, is complimented by the garlic and the chilli with suttle hints of the other herbs, we spread our on thinly sliced toasted bruschetta, our first bowl full vanished almost with out trace.

Tomato Flakes, (Tomato, Glucose Syrup, Maltodextrin, Maize Starch), Sun-dried Tomato, Salt, Red Onion, Garlic, Black Pepper, Basil, Chilli, Oregano, Parsley, Paprika.

Possibilities for uses seem almost endless, a coating on roast chicken, enhance a stuffing mix, added to potato wedges, add to home made sausages… infact almost anything at this moment would seem to be a candidate for added this, we very much enjoyed it.
