Stuart at Hot-Headz has been cooking again and this time he has created a new Naga Sauce.

Its is not the hottest Naga sauce I have tried but it tastes and smells great, as you open the bottle Ginger and Garlic are the first things you can smell, at first taste it is the Ginger are Garlic that are the first flavors to appear and then the Naga hits, it is not overpowering but after years of sauces I am not always the best judge of heat. This is an un-thickened, un-strained, cooked hot sauce and you can tell Stuart has had years of experience as the it has not separated like so many of the craft sauces we have seen over the years.

Ingredients: Tomato, water, onion, sugar, vinegar, ginger, Naga Chilli, garlic, salt, sunflower oil.

I think I can speak with authority having been to every Chilli Fiesta at West Dean Gardens since it began (10 years?). I’ve tried a full complement of the hot, the tasty and the downright uncomfortable. Hotheadz always have the hottest sauces, well Chilli Pete is producing some monsterous extracts too. I tried this new Naga Bhut Jolokia sauce and was so impressed by the flavour (as above garlic, ginger and onion) I bought two!

It’s great in stirfrys and dipping. not too hot… Just right in my opinion! Nice one Stuart.
